This cheese with protected denomination of origin (DOP) Mahón-Menorca is made with pasteurized cow’s milk and it is mild in taste.

Its color is white-yellowish, with an undeveloped rind and a soft and elastic texture. It emanates lactic aromas prompting a slight reminiscence of butter and a slight acid hint, characteristic of the Mahón-Menorca cheese. It is subject to a slight maturation from 21 to 60 days.

Presentation formats: Whole pieces (3.5 kg aprox.) Or portioned in quarters or eighths of a piece. Vacuum packed or wrapped in waxed paper (whole pieces).

This cheese with protected denomination of origin (DOP) Mahón-Menorca is made with pasteurized cow’s milk. Distinctive and unmistakable in appearance, the firm rind is orange and easy to cut, the cheese is a yellowish ivory color and has a number of tiny eyes distributed irregularly. The flavor and dairy aromas are more evolved, with certain reminiscences of butter and toasted nuts (hazelnuts), of medium palate presence.

Subjected to an average maturation process from 2 to 5 months.

Presentation formats: Large whole pieces (3.4 kg aprox.) And whole small pieces (0.9 kg aprox.) Or portioned in quarters or eighths of a piece. Vacuum packed or wrapped in waxed paper (whole pieces).

This cheese with protected denomination of origin Mahón-Menorca (DOP) is made with pasteurized cow’s milk. Its texture is firmer and harder, less elastic and in an advanced cured stage. Taste and aromas are very evolved, complex and intense, with a long palate presence. Subjected to a long maturation process with a minimum of 5 months.

This cheese with protected denomination of origin (DOP) Mahón-Menorca is elaborated with raw cow’s milk. The rind is brown, firm and easy to cut. The cheese has a yellowish ivory color, with a number of tiny bubbles distributed irregularly. The flavors and dairy aromas are more evolved, somewhat stronger reminiscent of butter and toasted hazelnut, of medium palate presence, it has developed the characteristic “bouquet” of DOP Mahón-Menorca. Subjected to medium maturation process from 2 to 5 months.

Presentation formats: Large pieces (2.7 kg aprox.) Or portions in quarters or eighths of a piece. Vacuum packed or wrapped in waxed paper (whole pieces).

This cheese with protected denomination of origin (DOP) Mahón-Menorca is elaborated with raw cow’s milk. A delight for cheese lovers, its texture is much firmer and harder, less elastic, even brittle, becoming flaky when cut in advanced stages of curation. The taste and aromas are very evolved, with a long palate presence. It suggests notes of aged wood and tanned leather with a spicy flavor. When the curation exceeds the year, it is then called Old cheese and the aromas and flavors are accentuated much more. Subjected to a long maturation process, above 5 months.

Ideal to eat alone as aperitif, in the form of a skewer, combining both.
