Each piece of Hort Sant Patrici cheese has its personality. All the pieces made in our cheese factory have in common a unique taste achieved by the nature of Menorca’s pastures.

The pillars of our production process are the utensils, techniques and traditions that we maintain untouched while adapting to the technological evolutions. The Mahón – Menorca Cheese DOP from Hort Sant Patrici is made with cow’s milk. Its traditional form is a quadrangular shape with smooth rounded edges. Its weight varies between 1 and 4 kilograms and can be discovered in different maturity stages: TIERNO (young cheese), when its maturation is under 2 months, SEMICURADO (semi-aged cheese) when its maturation is above 2 months and CURADO (aged cheese) when it is cured for more than 5 months.
To develop its aromas, the Mahón – Menorca Cheese DOP from Hort Sant Patrici is refined in aging chambers for a minimum of 20 days and up to 1 year. During the ripening stages, the color of this cheese ranges from ivory to dark brown. It also highlights the degree of intensity of the flavor; slightly salty, acidic and somewhat spicy characteristic that are personal to this denomination.
This process of elaboration would not be possible without the daily dedication of the master cheesemaker, with his knowledge, love and meticulous eye, he carefully develops a cheese with a unique flavor.
Hort Sant Patrici cheese
Hort Sant Patrici cheese is recognized under the Mahón-Menorca denomination of controlled origen (DOP) since 1986, thus guaranteeing the authenticity of its origin as well as the controlled elaboration and ripening processes.
Centennial traditions, transmitted by long lineage of farming families, such as the process of making Mahón cheese, are those that make possible a cheese such as Hort Sant Patrici, a process now improved due to current technological advances.
The Mahón – Menorca Cheese DOP
The island of Menorca has a different microclimate than that of its neighbors because of the total absence of rugged terrain, the presence of winds and, especially, rainfall, which is relatively heavy for a Mediterranean island (600 liters / m2 per year), seasonally distributed from autumn to spring; these precipitations are complemented by the distinctive nocturnal dew. Moreover, the island enjoys typical Mediterranean climate, with temparatures during winter of 10ºC and during summer of 23ºC. It also turns out to be a very suitable place for the growth of forage plants and, therefore, for the pasture for cattle.
